Zucchini Cake

Ingredients
  • 3 cups grated zucchini
  • 3 cups sugar
  • 1 cup cooking oil
  • 4 eggs
  • 1 tsp vanilla
  • 3 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 cup nuts, chopped
  • Icing:
  • 1/4 cup butter or margarine
  • 1 tsp vanilla
  • 2 cups powdered sugar
Directions
  • Mix together zucchini, sugar, oil, eggs and vanilla, beat well. Combine dry ingredients, add to zucchini mixture, blending well. Stir in nuts.
  • Bake in greased and floured 9x13” pan at 350 degrees for 50-55 minutes or bake in greased and floured bundt pan at 325 degrees for 1 1/2 hrs. Cool and frost.
  • Icing:
  • Combine ingredients and beat thoroughly. Add small amount of milk if needed. Spread on cake.
