Zucchini Bread

Zucchini Bread is the go-to recipe when that one zucchini plant in your garden produces enough zucchini to feed half the world. Bake as many loaves as you wish and freeze them for later. They will be a welcome treat in the middle of January when you’re staring at a frozen landscape.

Recipe: Zucchini Bread


  • 3 cups flour
  • 1 tsp salt
  • 1 tsp soda
  • 3 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 cup chopped nuts
  • 3 eggs, beaten
  • 2 cups sugar
  • 3 tsp vanilla
  • 1 cup oil
  • 3 cups grated zucchini


  1. Sift flour, salt, soda, cinnamon and baking powder together
  2. Beat eggs
  3. Add sugar, vanilla and oil, mix well
  4. Stir in grated zucchini
  5. Add dry ingredients and blend
  6. Stir in nuts
  7. Bake in 2 greased bread pans
  8. Bake at 350 degrees for 1 hour
