Recipe: Wild Duck


  • Duck of your choice
  • Sauerkraut
  • Salt and pepper


  1. Season ducks with salt and pepper
  2. Stuff each duck with sauerkraut
  3. Use sauerkraut juice for part of liquid in roasting pan
  4. Roast at 325-350 degrees F until tender
  5. Uncover pan last 1/2 hour to brown
