White Fruit Cake

Recipe: White Fruit Cake

Ingredients

  • 1 15 oz can crushed pineapple with juice
  • 1 1/2 cup sugar
  • 1/2 tsp cream of tartar
  • 1 lb butter
  • 2 cups sugar
  • 9 eggs
  • 4 cups flour
  • 1/2 lb slivered almonds
  • 1/2 lb red candied cherries
  • 1/2 lb green candied cherries
  • 1/2 lb mixed candied fruit
  • 1 1/2 lb white raisins
  • 1 tsp almond flavoring

Instructions

  1. Cook pineapple with juice slowly
  2. Add sugar, cream of tartar, butter creamed with sugar and eggs
  3. Add flour
  4. Add almonds, candied fruits, raisins and flavoring
  5. Bake in greased paper lined pans at 325 degrees F for 2 1/2 hours for small cakes
  6. Yields 10-12 pounds
