Vegetable vinaigrette

Vegetable vinaigrette

   Serves 4
Ingredients
  • 2 medium tomatoes
  • 1/4 lb mushrooms, sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup celery, diced
  • 2 green onions, diced
  • 1 cup safflower oil
  • 1/3 cup wine vinegar
  • 2 tsp oregano
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp dried parsley flakes
  • 1/2 tsp pepper
  • 1/2 tsp dry mustard
  • 1/4 tsp dry garlic or 2 cloves fresh garlic, crushed
Directions
  • Cut all vegetables and place in glass casserole dish. Combine remaining ingredients and pour over vegetables. Cover and chill 2 to 3 hours, basting occasionally. Before serving, top with green onions. Makes 4 servings
