Vegetable Soup

A nice, big bowl of homemade vegetable soup is one of the best ways to get a lot of the veggies you need all in one dish and this vegetable soup recipe is just the trick.

Vegetable Soup

Cooks in   
  • 7 cups water
  • 1 can whole tomatoes
  • 4 chicken bouillon cubes
  • 1 cup chopped onion
  • 1 cup thinly sliced carrots
  • 1 cup diced raw potatoes
  • 1 10oz. pkg. frozen peas
  • 1 10oz. pkg. frozen baby lima beans
  • 1 10oz. pkg. frozen corn
  • 1 tbsp. salt (or less)
  • 1 bay leaf
  • 1/2 tsp. sweet basil leaves
  • 1/4 tsp. dill seed
  • Combine ingredients in a large heavy sauce pot. Over medium heat, bring to a boil. Reduce heat and simmer for about 1 hour or until vegetables are tender. Seventy calories per serving.
