Twice Baked PotatoesOur own recipe for Twice Baked Potatoes can easily be prepared ahead of time, allowing you to simply throw these on the grill (or in the oven in the off months) when you’re tailgating or having a back yard cookout. The most delicious potatoes you’ve ever had will be ready in mere minute.

Twice Baked Potatoes

  
Ingredients
  • 2 Potatoes
  • 2 tbsp butter
  • 1/4 cup sour cream
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2-4 strips bacon, cooked and crumbled
  • 1/8 lb sharp white cheddar cheese, cubed
  • 1-2 tbsp shredded cheddar cheese (sprinkled on top of potato prior to second time baking)
Directions
  • Bake potatoes in 450 degree oven for approximately 1 hour, poke 2-3 sets of holes in top of each potato prior to baking.
  • Remove potatoes from oven and slit tops open (or slice top 1/4 of each potato completely off). Scoop baked potato form shell and place in bowl with all ingredient except shredded cheddar cheese. Mix potato and other ingredients together, careful not to over mix. Spoon mixture back into potato shell and sprinkle top with cheddar cheese. Best when prepared on a grill on medium heat for approximately 10 minutes.
  • These are great for preparing the day before your tailgating excursion. Simply wrap in aluminum foil and take to the game, unwrap and grill.
