Tomatoes Vinaigrette

  • 4 large tomatoes, sliced
  • 6 tbsp chopped fresh parsley
  • 1 clove garlic, crushed
  • 6 tbsp olive oil
  • 2 tbsp cider vinegar
  • 1 tsp salt
  • 1/2 tsp dried basil
  • 1/8 tsp pepper
  • Place bowl and sprinkle with parsley, mix together garlic, oil, vinegar, salt, basil and pepper and pour over tomatoes. Cover. Chill 3 hours or overnight. Serves 4-6.
