While Taco Potato Casserole isn’t a Mexican recipe, its Minnesota origins shine through with the use of hearty ingredients such as ground beef, tomatoes and the old standby — potatoes.
Recipe: Taco Potato Casserole
Ingredients
- 1 16 oz pkg frozen cut potatoes
- 1/2 cup onion
- 1 tbsp oil
- 1 16 oz can stewed tomatoes
- 1 lb hamburger
- 1 tsp pepper
- 1 tsp oregano
- 1 tsp salt
- 1/4 tsp garlic powder
- 1-1/2 cups shredded cheese
- 1 tsp chili powder
Instructions
- Saute onion in oil
- Stir in tomatoes, hamburger and spices and bring to boil
- Simmer 10 minutes
- Spread 1/2 of potatoes in casserole, cover with 1/2 of sauce, cover sauce with 1/2 of cheese
- Repeat layers, ending with cheese
- Bake at 375 degrees for 45 minutes to 1 hour
