Taco Potato Casserole

While Taco Potato Casserole isn’t a Mexican recipe, its Minnesota origins shine through with the use of hearty ingredients such as ground beef, tomatoes and the old standby — potatoes.

Recipe: Taco Potato Casserole

Ingredients

  • 1 16 oz pkg frozen cut potatoes
  • 1/2 cup onion
  • 1 tbsp oil
  • 1 16 oz can stewed tomatoes
  • 1 lb hamburger
  • 1 tsp pepper
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp garlic powder
  • 1-1/2 cups shredded cheese
  • 1 tsp chili powder

Instructions

  1. Saute onion in oil
  2. Stir in tomatoes, hamburger and spices and bring to boil
  3. Simmer 10 minutes
  4. Spread 1/2 of potatoes in casserole, cover with 1/2 of sauce, cover sauce with 1/2 of cheese
  5. Repeat layers, ending with cheese
  6. Bake at 375 degrees for 45 minutes to 1 hour
