Sweet Potato Pie

  • 2 cups mashed, cooked sweet potatoes
  • 1 stick butter or margarine, softened
  • 2 egg yolks
  • 1/2 cup brown sugar
  • 1/4 tsp salt
  • 1/2 tsp each ginger, cinnamon and nutmeg
  • 1/2 cup milk
  • Mix ingredients and add milk. Fold in 2 beaten stiff egg whites with 1/4 cup white sugar.
  • Pour into unbaked pie shell. Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake until firm. Sprinkle nutmeg and white sugar on top before baking if desired.
