Swedish Coconut Cookies

  • 1 cup butter
  • 2 cups sugar
  • 1 tsp. soda
  • 1 cup coconut
  • 1 cup shortening
  • 3 cups flour
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • Sift dry ingredients together and work into butter and shortening, vanilla and coconut with pastry blender, then using your hands work dough until soft. Roll dough into balls and flatten with a fork; sprinkle with coarse sugar. Bake at 350 for 10-12 minutes or sightly browned. If you prefer, shape dough into rolls and wrap in wax paper and chill overnight then slice with sharp knife.
