Strawberry Pie

Strawberry Pie Recipe

  • Crust:
  • 2 eggs
  • 1/4 cup sugar
  • 1/2 cup butter (soft)
  • 1 3/4 cup flour
  • 1/4 tsp. vanilla
  • Filling:
  • 4 cups sliced fresh strawberries
  • 2 cups sugar
  • 6 tbsp. cornstarch
  • 4 cups whole berries
  • Beat eggs, add sugar, vanilla and butter. Blend well. Add flour and knead well, chill. Divide into 2 parts. Roll thin and put in pie tins. Bake at 375 for 10 minutes. Cook sliced berries, sugar and cornstarch until thick and clear, stirring constantly. Cool. Put 2 cups of whole berries into each pie crust. Pour cooked berries over and top with whipped cream. Refrigerate at least 3 hours before serving.
