Strawberry Glace Cake

  • 1 pkg. (about 18 oz.) super moist lemon or white cake mix
  • 1 1/2 cups chilled whipping cream
  • 1/4 cup powdered sugar
  • 1 pint strawberries
  • 3 oz. cream cheese, softened
  • Prepare and bake cake mix as package directs. Use tow greased and floured 8 inch or 9 inch layer cake pans. Cool 10 minutes then remove from pans and cool completely.
  • Whip cream and powdered sugar in chilled bowl until stiff. Coarsely chop 1/2 cup berries; fold into 1 cup of whipped cream; fill layers
  • Prepare Glace; cool 5 minutes. Spread cream cheese over top of cake to edge. Halve remaining strawberries. Arrange, cut side down, on cream cheese. Spoon glace over berries. Frost sides of cake with remaining cream, Garnish with while berries if desired. Refrigerate.
  • Glace:
  • Mix 1/3 cup sugar and 2 tsp cornstarch in 1 qt saucepan. Stir in 1/3 cup water and 5-6 drops red food coloring Cook, stirring, over medium heat until mixture thickens and boils. Boil and stir 1 minute.
