Spicy Pineapple Zucchini Bread

Ingredients
  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 tsp Vanilla
  • 2 cups grated zucchini
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 tsp salt
  • 11/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 cups flour
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 8oz. can crushed pineapple
Directions
  • Beat eggs, oil, sugar & vanilla. Stir in Zucchini, drain pineapple and mix in the rest of the ingredients. Pour into 2 greased loaf pans and bake at 350 for 1 hour.
