Sour Cream Rhubarb Squares

Ingredients
  • 1 1/2 cups brown sugar, packed
  • 1/2 cup shortening
  • 1 egg
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1 1/2 cups rhubarb, chopped
  • For topping:
  • 1/2 cup sugar
  • 1/2 cup chopped nuts
  • 1 tsp ground cinnamon
Directions
  • Cream together brown sugar mix, shortening and egg. Stir together flour, soda and salt. Add to creamed mixture alternately with sour cream. Stir in rhubarb. Turn into greased and floured 13x9 inch pan.
  • Mix sugar, nuts and cinnamon. Sprinkle topping on batter. Bake at 350 degrees for 45-50 minutes. Excellent topped with ice cream.
