Snowball Cookies

Ingredients
  • 1/2 cup butter
  • 1/3 cup sugar
  • 1 egg yolk
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 1/4 cup flour
  • Frosting:
  • 2/3 cup sugar
  • 1 egg white
  • 1/4 cup light corn syrup
  • 2 tbsp water
  • 1/8 tsp salt
  • 1/8 tsp cream of tartar
Directions
  • Cream butter, add sugar, creaming well. Blend in egg yolk, vanilla and salt. Slowly add flour, mix well. Divide dough into three portions. Shape each portion into a 10 inch roll. Cut into 3/4 inch pieces; place on ungreased cookie sheet. Bake at 350 degrees 15-17 minutes. Cool and coat with frosting. Roll in 2-2 1/2 cups toasted coconut.
  • Frosting directions:
  • Combine in top of double boiler. Cook over rapidly boiling water. Beat with electric mixer until mixture stands in straight peaks. Remove from heat. Add 1 tsp vanilla. Continue beating 1 minute.
