Recipe: Rhubarb Upside Down Cake

Ingredients

  • 1 cup marshmallows
  • 4 cups rhubarb
  • 1 cup sugar
  • 1 1/4 cup flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 4 tbsp soft butter
  • 1 tsp vanilla

Instructions

  1. Combine marshmallows, quartered, with 4 cups rhubarb and 1 cup sugar in 8×11 inch cake pan
  2. Combine remaining ingredients and pour over rhubarb mixture
  3. Bake at 350 degrees F for 40 minutes
