Rhubarb Pie

Rhubarb Pie is a tangy but sweet springtime dessert that is sure to make you yearn for still warmer weather that summer brings. With rhubarb being a practically free ingredient, you’ll always want a pan of this pie waiting for supper.

Recipe: Rhubarb Pie

Ingredients

  • 1 9 inch baked pie shell
  • 4 cups rhubarb, cut in cubes
  • 1 1 /2 cups sugar
  • 2 rounded tbsp flour
  • 3 eggs, separated
  • 1 scant tsp vanilla
  • 2 tbsp water
  • Meringue:
  • 3 egg whites, stiffly beaten
  • 3 tbsp sugar
  • 1/2 tsp vanilla

Instructions

  1. Mix rhubarb, sugar and flour
  2. Put this mixture in a heavy saucepan
  3. Add 2 tbsp water
  4. Add 3 beaten egg yolks
  5. Cook until thick and rhubarb is done
  6. Remove from heat and add vanilla
  7. Pour into baked pie shell
  8. Top with beaten meringue
  9. Bake at 325 degrees F until golden brown
