Rhubarb Pie

Recipe: Rhubarb Pie

Ingredients

  • 1 unbaked pie shell
  • 1 tbsp butter
  • 2 eggs, separated
  • 1 1/4 cup sugar
  • 2 tbsp flour
  • 1/8 tsp salt
  • 2 1/2 cups rhubarb
  • 1/4 cup sour cream
  • Meringue:
  • 2 egg whites
  • 1/4 cup sugar

Instructions

  1. Blend butter, egg yolks, sugar, flour, salt and sour cream until creamy
  2. Add rhubarb and pour into unbaked pie shell
  3. Bake 15 minutes in 450 degree F oven, then turn oven to 350 degrees F and finish baking, about 40 minutes
  4. Prepare meringue and top the pie
  5. Return to oven until meringue is brown
