Rhubarb Dessert

  • 4 cups chopped rhubarb
  • 2 cups sugar
  • 3 eggs
  • 3 tbsp water
  • 1 cup flour
  • 1 tsp baking powder
  • pinch of salt
  • Place rhubarb in buttered 9x9 inch cake pan. Sprinkle with 1 cup sugar. Beat eggs until light and fluffy. Add remaining sugar and water. Sift dry ingredients. Stir until flour is blended. Pour over rhubarb. Bake at 350 degrees for 35-40 minutes.
