Rhubarb Custard Pie

Made with fresh rhubarb and a smooth, delicate custard, this rhubarb custard pie recipe is a real winner.

Recipe: Rhubarb Custard Pie

Ingredients

  • 3 eggs
  • 2 2/3 tbsp milk
  • 2 cups sugar
  • 4 tbsp flour
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 4 cups cut-up rhubarb
  • 1 unbaked pie crust
  • Crumb topping:
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 cup flour

Instructions

  1. Beat eggs slightly, add milk
  2. Mix together and add sugar, flour, nutmeg, cinnamon and vanilla
  3. Mix in rhubarb
  4. Put in unbaked crust
  5. Cover with crumb topping
  6. Bake for 50-60 minutes
