Rhubarb Cobbler

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 cup flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1/4 cup milk
  • 2 egg whites, beaten stiff
  • 4 cups diced rhubarb
  • 1 1/4 cups sugar
  • Cream softened butter and gradually beat in 1/2 cup of sugar. Stir in flour, salt and baking powder together. Mix into creamed butter mixture alternately with milk. Fold in egg whites. Mix rhubarb and 1 1/4 cups sugar; spread in bottom of pan. Pour batter over fruit and bake in preheated oven at 350 for 30-35 minutes. Serve warm or cold, topped with whipped cream or ice cream.
