Rhubarb Cake Recipe

Ingredients
  • Cake:
  • 1 1/2 cups brown sugar
  • 1/2 cup Margarine
  • 1 egg
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 1/2 cups chopped rhubarb
  • Topping:
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 cup coconut
  • 1 tablespoon butter
Directions
  • Preheat oven to 350 degrees. In a large mixing bowl mix the cake ingredients together. In small bowl mix topping ingredients together. Grease 9x13 cake pan and pour cake mixture into pan. Then sprinkle topping onto the cake mixture and place in oven for 40 minutes.
