Rhubarb Bars

Ingredients
  • 3 cups rhubarb, chopped
  • 1 1/2 cups sugar
  • 2 tbsp corn starch
  • 1/4 cup water
  • 1 tsp vanilla
  • Cook above mixture until thick.
  • 1 1/2 cups oatmeal
  • 1 1/2 cups flour
  • 1 cup brown sugar, packed
  • 1/2 tsp baking soda
  • 1 cup shortening
Directions
  • Put 3/4 of mixture on the bottom of a large pan. Spread the rhubarb mixture over the crust and sprinkle the rest of crumbs on top. Bake at 375 degrees for 30-35 minutes.
