Raspberry Pie

Raspberry PieFresh raspberries – especially when used in raspberry pie –  are arguably the best part of summer. Here’s a great pie recipe that also works with blackberries, black raspberries, or other berries of your choice for a truly delicious dessert.

Raspberry Pie

American, Dessert
  • 1 cup sugar
  • 1 cup water
  • 2 tbsp corn starch
  • Stir and cook until thick
  • Add:
  • 3 tbsp raspberry jell-o (not sugar-free)
  • 1/2 tsp margarine
  • Mix and cool.
  • Crust:
  • 1 1/2 cups flour
  • 1 tbsp sugar
  • Dash of salt
  • 1/2 cup oil
  • 2 tbsp milk
  • Mix oil and milk together and pour over flour/sugar/salt - mix with fork, knead with hands and spread in glass pie plate. Bake 15 minutes at 350 degrees. Cool.
  • Use 2-3 points raspberries and gently mix so as to not crush the berries. Top with Cool Whip or whipped cream.
