Quail with Mushrooms

Recipe: Quail with Mushrooms

Ingredients

  • 6 slices bacon
  • 6 quail, well dressed
  • salt and pepper
  • 1/2 pound mushroom caps
  • 1 bunch green onions, chopped
  • 3 tbsp melted butter
  • 2 tbsp prepared mustard
  • 1/2 tsp dry ginger
  • 1 cup orange marmalade

Instructions

  1. Wrap 1 slice bacon around each quail
  2. Place in rows on heavy duty foil
  3. Season with salt and pepper
  4. Sauce mushrooms and onions in butter and pour over quail
  5. Seal with double wrap
  6. Bake at 325 degrees for 1 hour
  7. Mix remaining ingredients
  8. Serve with quail
