Pumpkin Torte

Recipe: Pumpkin Torte

Ingredients

  • CRUST:
  • 24 graham crackers, crushed
  • 1/3 cup sugar
  • 1/2 cup margarine, melted
  • FIRST LAYER:
  • 2 beaten eggs
  • 8 oz. cream cheese
  • 3/4 cup sugar
  • SECOND LAYER:
  • 2 cups pumpkin
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 3 egg yolks
  • 1/2 cup milk
  • 1 tsp cinnamon
  • 1 envelop Knox gelatine
  • 1/4 cup water
  • 3 egg whites
  • 1/4 cup sugar
  • Whipped cream

Instructions

  1. Mix crust ingredients and press into 9×13 inch pan
  2. Mix together ingredients for first layer and pour over crust
  3. Bake 20 minutes at 350 degrees F
  4. Combine 2 cups pumpkin, 1/2 cup sugar, 1/2 teaspoon salt, 3 egg yolks, 1/2 cup milk and 1 teaspoon cinnamon
  5. Cook just until heated through
  6. Add the Knox gelatine which has been dissolved in 1/4 cup water
  7. Cool
  8. Beat 3 egg whites
  9. Add 1/4 cup sugar
  10. Fold into pumpkin mixture
  11. Pour over baked crust
  12. Refriegerate
  13. Garnish with whipped cream
