Pumpkin Chiffon Pie

A decadent dessert, Pumpkin Chiffon Pie is one of those rare treats that will have your guests thinking that you slaved all day long when in reality you took about 30 minutes to prepare this top-notch dessert.

Recipe: Pumpkin Chiffon Pie


  • 1 envelope Knox gelatin
  • 1/4 cup cold water
  • 1 1/4 cup canned pumpkin
  • 1/2 cup milk
  • 1/4 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup sugar
  • 3 eggs
  • 1 baked pie shell


  1. Slightly beat egg yolks, add 1/2 cup sugar, pumpkin, milk, salt and spices
  2. Cook until thick in double boiler
  3. Soften gelatin in cold water
  4. Add to hot pumpkin mixture, mix thoroughly and cool
  5. When it begins to thicken, fold in stiffly beaten egg whites to which the other 1/2 cup sugar has been added
  6. Pour into previously baked pie shell
  7. Chill thoroughly in refrigerator
