Potato Soup

  • 4 medium potatoes, pared and diced
  • 4 slices onion
  • 2 tsp salt
  • 2 cups hot milk
  • Dash of pepper
  • 1 stalk celery, finely chopped
  • 3/4 cup boiling water
  • Combine potatoes, onion and salt in saucepan, add boiling water. Cover and cook until potatoes are tender. Do not drain. Mash potatoes with a fork, add milk, pepper and celery. More milk may be added if soup is too thick. Serve hot. Serves 4.
