Potato Croquettes

  • 2 cups leftover mashed potatoes, chilled for ease of handling
  • 1 tsp seasoned salt
  • 1 cup cornflake crumbs
  • Add seasoned salt to mashed potatoes and divide into 4 portions. Roll each into shape of ball. Shake in bag with cornflake crumbs until well covered. Pinch top of ball and flatten bottom so that it will be in the form of a croquette (cone-shaped). Place on baking sheet and bake at 350 degrees for 30 minutes until piping hot. Serves 4.
