Porcupines (Meatballs)

The recipe for Porcupines (Meatballs) results in a zesty batch of sauce-infused meatballs perfect for a party any time of year or serving up in sub sandwiches.

Recipe: Porcupines (Meatballs)


  • 2 lb ground beef
  • 1 cup raw rice
  • 1 medium onion
  • 1 tbsp salt
  • 2 eggs
  • 2 cans tomato soup or 1 qt home canned tomatoes


  1. Mix together beef, rice, onion, salt and eggs
  2. Form into balls
  3. Drop into boiling mixture of 2 cans tomato soup diluted with 2 cans water or the quart of home canned tomatoes
  4. Simmer gently for 1-1/2-2 hours on top of range or in 325 degree F oven
