Pineapple bars

Recipe: Pineapple bars

Ingredients

  • 1/2 cup butter or margarine
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 cups flour
  • 1 15 oz can crushed pineapple
  • 1 cup sugar
  • 2 tbsp corn starch
  • 2 egg yolks

Instructions

  1. Mix butter and shortening, 1 cup sugar and flour as for pie crust
  2. Place 2/3 of mixture into 9×12 inch pan
  3. Mix together the undrained pineapple, sugar, corn starch and eggs
  4. Cook until thick, spread on top of crust
  5. Add remaining crust mixture over top of filling
  6. Bake at 350 degrees F for 20-25 minutes
