Recipe: Petite Cherry Cheesecakes

Ingredients

  • 2 8 oz pkgs cream cheese
  • 1/4 cup sugar
  • 2 eggs
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 24 vanilla wafers
  • 1 21 oz can cherry pie filling
  • Small paper baking cups (muffin papers)

Instructions

  1. Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy
  2. Line small muffin tins with paper baking cups
  3. Place vanilla wafer in each cup
  4. Fill cups 2/3 full with cream cheese mixture
  5. Bake for 15-20 minutes in 375 degree F oven
  6. Top each with about 1 tbsp cherry pie filling
  7. Chill
  8. Makes 2 dozen
