Peanut Pie

The recipe below for Peanut Pie seems to be a decadent treat straight out of Georgia but it is a Minnesota favorite that is perfect for any time of year and one of those recipes that will be gone in the blink of an eye.

Recipe: Peanut Pie


  • 1 graham cracker pie crust
  • 1 box French vanilla pudding
  • 1-2 tbsp creamy peanut butter
  • 1 can Spanish peanuts, chopped (salted are O.K.)
  • 1 tub Cool Whip


  1. Put a layer of chopped peanuts on prepared crust
  2. Make pudding and melt peanut butter in it (Peanut butter will not completely dissolve)
  3. Pour in shell and lay a piece of waxed paper on it
  4. Put in refrigerator to cool
  5. When cool, add another layer of peanuts
  6. Top with Cool Whip and sprinkle more peanuts on top
