Peanut Butter Bars

  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter or margarine
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup creamy or chunky peanut butter
  • 1 egg
  • 1/4 cup milk
  • 1/2 tsp vanilla
  • Sift flour, baking soda and salt on to waxed paper. Melt butter in a medium-sized saucepan over moderate heat. Remove from heat. Add sugars and peanut butter; beat with wooden spoon until thoroughly combined. Blend in egg, milk and vanilla until thick and creamy. Stir in flour mixture until thoroughly combined. Spread onto a greased 9x9x2 pan.
  • Bake at 375 degrees for 25 minutes. Cool completely. Spread with orange frosting; drizzle chocolate icing across frosting in lines 1 inch apart. Draw edge of spatula across lines. Cut into bars.
  • Orange Frosting:
  • Beat 3 tbsp butter with 1 tsp grated orange rind in a small bowl until creamy. Gradually beat in 2 cups powdered sugar with 1 or 2 tbsp orange juice to make it spreadable.
  • Chocolate Icing:
  • Melt 1/2 square unsweetened chocolate with 1/4 tsp vegetable shortening in a small bowl over hot, not boiling, water.
