Oatmeal Cake

Ingredients
  • Cake:
  • 1 1/2 cups boiling water
  • 1 cup oatmeal
  • 1 stick margarine
  • 1 cup white sugar
  • 2 eggs (beaten)
  • 1 1/3 cups flour
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 tbsp. instant cocoa mix
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • Frosting:
  • 1 stick margarine
  • 1 cup brown sugar
  • 1 cup coconut
  • 1/2 cup chopped nuts
  • 1 tsp. vanilla
Directions
  • Cake:
  • Pour boiling water over oatmeal and let it stand 20 minutes. Mix margarine, brown sugar and white sugar. Add eggs and oat mixture; mix well. Sift in dry ingredients and mix. Add nuts and raisin if desired. Pour into 9x13 inch pan and bake at 350 for 35 minutes.
  • Frosting:
  • Bring margarine, brown sugar and cream to a boil. Add coconut, nuts and vanilla. Mix well. Spread on hot cake.
