Napoleon Creme Bars

  • 1/4 cup butter, softened
  • 1/4 cup sugar
  • 1/4 cup cocoa
  • 1 tsp. vanilla
  • 1 egg, slightly beaten
  • 2 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1/2 cup butter
  • 3 tbsp milk
  • 1 pkg. (3.75 oz.) instant vanilla pudding
  • 2 cups confectioner's sugar
  • 1 pkg. (6 oz.) chocolate chips
  • 2 tbsp butter
  • First, combine flour ingredients in top of double boiler. Cook until butter melts. Stir in egg and continue cooking until mixture thickens, about 3 minutes. Press in buttered 9x9 pan. Cream 1/2 cup butter. Stir in milk and sugar. Beat until fluffy. Spread evenly over crust. Chill until firm. Melt chocolate and the 2 tablespoons of butter. Cool. Spread over pudding layer. Chill and serve.
