Mom’s Sponge Cake

Recipe: Mom’s Sponge Cake


  • 1 cup cake flour
  • 1 tsp baking powder
  • 1 cup sugar
  • 1 tsp vanilla
  • 6 eggs, separated
  • dash of salt


  1. Sift flour
  2. SIft again with baking powder and salt
  3. Beat egg whites until they hold a stiff peak
  4. Set aside
  5. (On very warm days, refrigerate)
  6. Beat egg yolks about 3 minutes
  7. Slowly add sugar, then beat until light and creamy
  8. Beat in 1/4 of the egg whites, then slowly add flour mixture, a little at at ime, until flour is used
  9. Add vanilla
  10. Beat 3 minutes
  11. Slowly fold in rest of egg whites by hand
  12. Bake 35 minutes at 350 degrees F in angel food cake pan
  13. Invert to cool
