Mock Angel Food (Overnight Cake)

  • 2 cups cake flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 1 cup boiling water
  • 6 well-beaten egg whites
  • 1 tsp cream of tartar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Mix together flour, sugar and baking powder. Pour boiling water over. Mix lightly until damp. Let this stand overnight, or about 6 hours.
  • Beat egg whites well. Add cream of tartar, 1/2 tsp salt and vanilla. Add to flour mixture, folding gently.
  • Bake in an ungreased 9x13 inch pan at 325 degrees for 45 minutes.
