Microwave Rhubarb Cheesecake Squares

  • 1/2 cup margarine
  • 1 cup flour
  • 3/4 cup oatmeal, not instant
  • 1/2 cup brown sugar, packed
  • 1/4 tsp cinnamon
  • 8 oz. cream cheese, softened
  • 3/4 cup sugar
  • 1 egg
  • 1/4 tsp cinnamon
  • 3 1/2 cups rhubarb, chopped
  • Combine butter, flour, oatmeal, brown sugar and 1/4 tsp cinnamon; mix and pat into 8x8 glass dish. In separate bowl, combine cream cheese, sugar, egg and 1/4 tsp cinnamon. Use mixer to mix well. Add rhubarb and mix. Pour over bottom crust. Microwave on high 9-11 minutes or until rhubarb is fork tender. Let stand 15 minutes. Cover and chill until firm. Cut into squares. Store covered in fridge.
