Mexican Wedding Cookies

  • 2 cups walnuts or pecans; chop 1 cup nuts very finely, chop remaining 1 cup nuts less finely
  • 2 cups flour
  • 1/3 cup sugar
  • 2 sticks butter or margarine
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • Mix nuts, sugar and margarine for 1 1/2 minutes in mixer. Add vanilla and salt.
  • Slowly add flour mixture to butter mix.
  • Bake at 325 degrees for 17-19 minutes. Rotate pan half-way through baking.
  • Cool 2 minutes on sheet. Turn onto rack. Dip into powdered sugar. Dip 2nd in powdered sugar just before serving.
