  • 1 head cauliflower, separated into flowerettes
  • 2 cups broccoli flowerettes
  • 2 cups cherry tomatoes
  • 2 cups sliced tomatoes
  • 2 cups sliced mushrooms
  • 1 cucumber, sliced
  • 1 8 oz. bottle of low calorie Italian dressing
  • Combine vegetables in a large bowl. Pour on dressing. Refrigerate and let marinate 3 hours or overnight.
