Mackinac Island Dark Fudge

   Serves 36 1 inch pieces
  • 1 cup butter
  • 1 cup milk
  • 1 cup brown sugar (packed)
  • 1 cup sugar
  • 1/4 tsp salt
  • 1/2 cup unsweetened cocoa
  • In heavy 2 1/2 qt saucepan combine: butter, milk, and both sugars. Add salt and cocoa. Stir constantly and bring to boil; turn heat down to a gentle boil. Continue stirring and cooking for exactly 8 minutes. Turn off heat. Add all at once 1 pound plus 1 cup powdered sugar and beat with electric mixer until smooth and thick (about 8-11 minutes). Pour into generously buttered 9 inch square pan. Place in freezer 15 minutes and then cut into squares.
