Macaroon Cupcakes

Recipe: Macaroon Cupcakes

Ingredients

  • 6 egg whites
  • 1/2 tsp cream of tartar
  • 1/3 cup sugar
  • 1/2 tsp vanilla
  • 1/2 tsp almond extract
  • 3/4 cup flour
  • 1/2 tsp baking powder
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 cup flaked coconut

Instructions

  1. Beat egg whites until foamy, add cream of tartar and beat until stiff
  2. Fold in 1/3 cup sugar, vanilla and almond extract
  3. Add flour, baking powder, 1 cup sugar and salt
  4. Gently fold into egg white mixture
  5. Fold in 1 cup flaked coconut
  6. Put cupcake papers in muffin tin and fill half full
  7. Bake at 300 degrees F for 40-45 minutes
