Low Calorie Scalloped Potatoes

  • 2 lb. potatoes, pared and thinly sliced
  • 1 cup thinly sliced onion
  • 2 tbsp flour
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 cup skim milk, scalded
  • 1 cup chicken broth
  • Paprika
  • Arrange 1/3 of the potatoes in a lightly greased 2 qt. casserole. Arrange 1/3 of the onion on top of the potatoes. Combine flour, salt and pepper. Sprinkle 1/3 of the flour mixture over potatoes and onion. Repeat layers twice. Pour hot milk and chicken broth over all. Sprinkle with paprika
  • Bake in 375 degree oven for 75 minutes. Uncover and bake additional 30 minutes or until potatoes are tender. Makes 5 cups.
