Lemon Filling

  • 2/3 cup sugar
  • 1/4 tsp. cornstarch
  • 1/4 tsp. salt
  • 1 cup water
  • 1 egg yolk
  • 3 tbsp lemon juice
  • 1 tbsp grated lemon rind
  • Blend together sugar, cornstarch and salt. Add water and cook over direct heat until thick, stirring constantly. Blend the egg yolk with a little of the hot mixture, then add to the remaining mixture. Cook over low heat about 2 minutes, stirring constantly. Stir in lemon juice and lemon rind. Cool. Spread between layers.
