Lemon-Coconut Dainties & Lemon Butter Frosting

  • Lemon-Coconut Dainties:
  • 3/4 cup butter
  • 1/2 cup sugar
  • 1 egg yolk
  • 1 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 2 cups flour, sifted
  • 1 1/2 cups coconut
  • Lemon Butter Frosting:
  • 1/4 cup butter
  • 1 tsp. grated lemon peel
  • 1/8 tsp. salt
  • 2 cups powdered sugar, sifted
  • 4 tsp. lemon juice
  • Cream butter and sugar until light and fluffy. Beat in egg, vanilla and lemon extract. Blend in flour and coconut. Shape into walnut-sized balls. Place on greased baking sheet; flatten with a fork.
  • Bake at 350 for about 8 minutes or until edges are lightly browned. Remove cookies to cooling rack. For frosting cream butter, lemon peel, salt and powdered sugar. Add lemon juice and mix When cookies are cool frost them with lemon butter frosting.
