Lemon Bread

American, Dessert
  • 1/2 cup shortening
  • 1 cup sugar
  • Grated rind of lemon, or 2 capfuls of lemon extract
  • 1 1/2 tsp orange rind
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Mix shortening, sugar an d rinds. Add eggs, and milk and mix. Add flour, baking powder and salt. Mix and pour into greased and wax paper lined loaf pan.
  • Bake at 350 degrees (325 degrees for glass pan) for 50-55 minutes.
  • Mix together 1/4 cup sugar and 1/3 cup lemon juice. Pour this over bread as soon as removed from oven. Cool in pan 15-20 minutes then remove to cool on baking sheet.
