Lemon-Blueberry Salad

Sweet blueberries and tart lemons are delicious on their own but create a mouthwatering treat when combined in this recipe perfect for summer.

Lemon-Blueberry Salad

   Serves 8
  • 1 3oz. pkg. lemon gelatin
  • 1 3oz. pkg. black raspberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 tbsp. lemon juice
  • 1 can blueberry pie filling
  • 1/4 cup sifted confectioners sugar
  • 1 cup sour cream
  • Dissolve gelatins in boiling water, add cold water and lemon juice. Gradually stir into pie filling. Pour into 8x8x2 inch baking dish, chill until firm. Fold sugar into sour cream just until blended. Spread over gelatin mixture. Chill until served. Cut into squares. Makes 8 servings.
