Lemon Bars

  • Crust
  • 2 cups flour
  • 1 cup margarine
  • 1/2 cup powdered sugar
  • Filling
  • 2 cups sugar
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice
  • 1 teaspoon baking powder
  • 4 eggs
  • Heat oven to 350. Mix crust and press into the bottom of a 9x13 inchcake pan. Bake for 20 minutes. While crust is baking mix the filling. (For an even better lemon flavor instead of 2 cups of sugar add 1 3/4 cups sugar and 1/4 cup pre-sweetened lemonade mix.) when crust is done pour the filling on the crust and spread evenly. Bake for 25 minutes. Cool. Sprinkle powdered sugar on top and serve.
